Turkish Pumpkin and Red Pepper Stew
Big wedges of pumpkin braise with red pepper paste, onion and tomato until they turn buttery but still hold their shape. A pinch of dried mint and chili flakes gives this cozy olive oil stew its Anatolian character.
Test kitchen note: Cut the pumpkin in large chunks and resist stirring too much; gently shaking the pan keeps the pieces whole.
