Turkish Red Lentil Soup with Yogurt Swirl
Red lentils collapse into a creamy, golden puree with onion, carrot and a touch of cumin and mint. A swirl of cool yogurt and a crack of pepper make this humble pantry soup feel generous.
Test kitchen note: Rinse the lentils until the water runs almost clear; the excess starch otherwise foams over and dulls the final color.
Method 5 steps

Melt the butter in a pot and cook the onion and carrot over medium heat until soft, about 8 minutes.

Stir in the tomato paste, cumin and mint and cook for 1 minute.

Add the lentils and stock, bring to a boil and simmer for 25 minutes, stirring occasionally, until the lentils fall apart.

Blend until smooth, stir in the lemon juice and season with salt.

Ladle into bowls, swirl in the yogurt with the back of a spoon and finish with black pepper and parsley.
