Hungarian Lecso Pepper and Tomato Stew
Three colors of bell pepper slowly soften with onions, ripe tomatoes and sweet paprika into a thick, jammy stew. Scoop it up with seeded bread for a light supper, or spoon it over rice or eggs.
Test kitchen note: Salt the peppers as soon as they hit the pan; it draws out their juices so they stew in their own sweetness instead of frying.
