Vanilla Sugar Crinkle Cookies
Rolled in granulated sugar before baking, these soft vanilla cookies puff up and then settle into a crackled, sparkling surface. They stay pale and tender, with a buttery, marshmallow-soft middle that kids adore.
Test kitchen note: Pull them from the oven while the tops are still pale and barely set; they firm up as they cool and stay soft for days.
Method 6 steps
-
Heat the oven to 350F and line two baking sheets with parchment.
-
Beat the butter, oil and 1 cup sugar until light, about 2 minutes. Add the egg and vanilla and beat until smooth.
-
Mix in the flour, baking powder, baking soda and salt on low speed just until a soft dough forms.
-
Roll tablespoon-sized balls, then roll each generously in the remaining sugar.
-
Arrange 2 inches apart and bake 10 to 11 minutes, until the surfaces crack but remain pale.
-
Cool 5 minutes on the sheets, then transfer to a rack.
That is the whole pie. Enjoy every slice.
