Chewy Brown Butter Chocolate Chip Cookies
Browning the butter first gives these cookies a deep toffee flavor, and extra brown sugar keeps the centers soft and chewy while the edges crisp. Pools of melted chocolate make them dangerously good with a cold glass of milk.
Test kitchen note: Chill the dough for at least two hours; the flour hydrates, the cookies spread less and the flavor turns noticeably more caramel-like.

Melt the butter in a light-colored pan and cook, swirling, until it smells nutty and brown specks form, about 5 minutes. Pour into a bowl and cool 15 minutes.

Whisk both sugars into the butter, then add the egg, yolk and vanilla and whisk until glossy.

Stir in the flour, baking soda and salt, then fold in the chocolate chunks.

Cover and refrigerate the dough for at least 2 hours or up to 2 days.

Heat the oven to 350F. Scoop 2 tablespoon balls onto lined sheets, leaving room to spread.

Bake 10 to 12 minutes, until the edges are golden but the centers still look underdone. Cool on the sheet 5 minutes before moving to a rack.
