Vanilla Bean Creme Brulee with Strawberries
A trembling vanilla bean custard hides under a glassy sheet of caramelized sugar that cracks satisfyingly under a spoon. Fresh strawberries and a small buttery sandwich cookie on the side make it feel like a bistro dessert at home.
Test kitchen note: Chill the custards completely, blot any moisture from the surface, then torch a thin, even layer of sugar in two rounds for a flawless crust.
Method 6 steps

Heat the oven to 325F. Warm the cream with the vanilla bean and seeds until steaming, then cover and steep 15 minutes.

Whisk the yolks, granulated sugar and salt until pale. Slowly whisk in the warm cream and strain into a jug.

Pour into four 6 oz ramekins set in a roasting pan. Add hot water to reach halfway up the sides.

Bake 35 to 40 minutes, until the custards are set at the edges and wobble slightly in the middle.

Cool, then refrigerate at least 4 hours.

Sprinkle each with superfine sugar and caramelize with a kitchen torch until deep golden. Serve with a cookie, strawberry wedges and a mint leaf.
