Brazilian Chocolate Brigadeiros
Condensed milk, cocoa and butter cook down into a glossy, fudgy dough that is rolled into balls and coated in chocolate sprinkles. No Brazilian birthday party is complete without trays of these chewy, candy-like bites in little paper cups.
Test kitchen note: Cook the mixture until it slides from the bottom of the pan in one mass and leaves a clean trail, or the balls will not hold shape.
Method 6 steps

Combine the condensed milk, cocoa, butter and salt in a nonstick saucepan over medium-low heat.

Stir constantly with a spatula for 10 to 12 minutes, until the mixture thickens and pulls away from the bottom of the pan in one piece.

Scrape onto a buttered plate, cover and cool to room temperature, then chill 30 minutes.

Butter your hands lightly and roll teaspoon-sized portions into smooth balls.

Roll each ball in chocolate sprinkles until completely coated.

Set the brigadeiros in paper candy cups and serve at room temperature.
