Test kitchen note: Pull the pan when a toothpick shows moist crumbs, not wet batter; brownies keep cooking from residual heat and turn cakey if overbaked.

Method 6 steps

  1. Heat the oven to 325F and line an 8 inch square pan with parchment.

  2. Melt the butter with the sugar, cocoa and salt in a heatproof bowl over simmering water, stirring until glossy. Cool until just warm.

  3. Beat in the eggs one at a time and the vanilla until the batter pulls from the bowl, then stir in the flour.

  4. Fold in half the walnuts, spread into the pan and sprinkle the rest over the top.

  5. Bake 25 to 28 minutes until the center is just set. Cool at least 30 minutes, then cut into squares.

  6. Plate two brownies with a scoop of ice cream and a swirl of whipped cream, then drizzle everything with chocolate sauce.

That is the whole pie. Enjoy every slice.
