Three-Fruit Popsicles
Creamy pineapple coconut, bright strawberry and deep purple blueberry pops come out of one batch of molds for a colorful freezer stash. Each flavor uses real blended fruit and just a touch of honey, so they taste clean and refreshing.
Test kitchen note: Dip the mold briefly in warm water for 10 seconds to release the pops; pulling hard straight from the freezer snaps the sticks.
Method 5 steps
-
Blend the pineapple, coconut milk, 2 tablespoons honey and 1 tablespoon lime juice until smooth. Pour into 4 popsicle molds.
-
Rinse the blender and puree the strawberries with 2 tablespoons honey, 1 tablespoon lime juice and 1/4 cup water. Fill 4 more molds.
-
Blend the blueberries with the remaining honey, lime juice and water, then strain if you prefer a smoother texture. Fill the last 4 molds.
-
Freeze 1 hour, insert wooden sticks and freeze at least 5 hours more, until solid.
-
Dip the molds in warm water for about 10 seconds and slide out the popsicles. Serve right away or store in freezer bags.
That is the whole pie. Enjoy every slice.
