Seared Skirt Steak Salad with Avocado and Red Onion
Skirt steak is marinated in soy, lime and garlic, seared hard and sliced across the grain over frisee, tomatoes and cucumber. Fanned avocado and sharp red onion rings round out a hearty salad with a glossy balsamic finish.
Test kitchen note: Always slice skirt steak against the grain in thin strips; cut the other way and even a perfectly cooked steak turns chewy.
