Edamame, Seaweed and Rainbow Pepper Bowl
Bright stripes of edamame, crunchy peppers, cucumber and sesame-flecked seaweed salad make a colorful, protein-packed bowl. A ginger and rice vinegar dressing is spooned over just before eating, and avocado adds creamy balance.
Test kitchen note: Rehydrated dried wakame costs far less than prepared seaweed salad; soak it 5 minutes and squeeze it well before seasoning.
