Salmon Sashimi Rice Bowl
Seasoned sushi rice is fanned with buttery slices of raw salmon, fresh wasabi, crisp nori strips and green onion. It is the simplest kind of donburi, relying entirely on excellent fish and properly seasoned rice.
Test kitchen note: Buy sashimi-grade salmon from a trusted fishmonger and slice it with one long single stroke of a very sharp knife for glossy edges.
Method 6 steps

Cook the rice with 1 1/4 cups water, then let it steam off the heat for 10 minutes.

Warm the rice vinegar with the sugar and salt until dissolved and fold it gently into the hot rice. Fan the rice until it cools to body temperature.

Divide the rice between two bowls and smooth the top.

Arrange the salmon slices overlapping across one side of each bowl.

Pile the nori strips and green onions on the other side and add a small mound of wasabi.

Serve with soy sauce in a small dish for dipping.
