Kerala Ghee Rice with Fried Cashews and Raisins
Fragrant rice cooked in ghee with whole spices comes out fluffy, buttery and just slightly sweet. Crisp onions, toasted cashews and plump raisins scattered over the top make it festive enough for a Sunday lunch.
Test kitchen note: Fry the raisins last and pull them out the moment they puff up; a few extra seconds in hot ghee turns them bitter.
