Flakes of pan-roasted salmon are rolled in thin lavash with crisp lettuce and a lemony dill yogurt sauce. Pressed on a grill pan, the wrap picks up pretty char stripes and stays neat enough for lunch on the go.

Method 6 steps

  1. Rub the salmon with oil, salt and pepper. Roast in a skillet over medium-high heat for 4 minutes per side, then flake into large pieces.

  2. Stir the yogurt with chopped dill, lemon juice and a pinch of salt.

  3. Spread the dill sauce across each lavash, leaving a border.

  4. Layer lettuce and parsley over the sauce, then add the salmon flakes in a line.

  5. Fold in the ends and roll up snugly.

  6. Press the wraps on a hot grill pan for 1 to 2 minutes per side until striped, then cut in half on the diagonal and garnish with dill sprigs.
