Three slices of toast stack up thin-sliced turkey, mayo-dressed shredded lettuce, smoky bacon and thick rounds of hard-boiled egg. It is towering and messy in the best way, with ripe tomato adding a fresh lift between the rich layers.

Test kitchen note: Cook the eggs for exactly 10 minutes, then chill them in ice water; the yolks stay bright yellow and the slices hold together cleanly.

Method 6 steps

  1. Lower the eggs into boiling water and cook 10 minutes, then transfer to ice water. Peel and slice into rounds.

  2. Cook the bacon in a skillet until crisp, then drain on paper towels.

  3. Toss the shredded lettuce with 1 tablespoon of the mayonnaise and a pinch of pepper. Spread the rest on one side of each toast slice.

  4. Top two slices with turkey and dressed lettuce, then add a second slice of toast mayo side up.

  5. Layer on bacon, egg slices seasoned with salt and pepper, and tomato, then close with the last slices.

  6. Press gently, cut each sandwich in half with a serrated knife and serve at once.
