Smoked Salmon and Cucumber Tea Sandwiches

Soft crustless squares are layered with silky smoked salmon and lemony cream cheese, then topped with paper-thin cucumber ribbons. They look elegant on an afternoon tea tray yet take barely half an hour to assemble.

Test kitchen note: Use a vegetable peeler for the cucumber and blot the strips dry so they lie flat and stay crisp on top.

Method 6 steps

  1. Beat the cream cheese with lemon zest, dill and a grind of pepper.

  2. Butter six slices of bread lightly and cover them with smoked salmon.

  3. Spread the remaining six slices with half the cream cheese and press them on top of the salmon, spread side down.

  4. Spread the rest of the cream cheese over the tops and lay cucumber ribbons across in neat rows.

  5. Chill for 15 minutes, then trim off the crusts with a sharp knife.

  6. Cut each sandwich into four squares and arrange on a platter.
