Crispy Spicy Tuna Tempura Rolls
Seaweed and rice rolls are dipped in batter and flash-fried until crunchy, then sliced and crowned with a mound of spicy chopped tuna. The contrast of hot, crackly rice and cool, fiery fish is irresistible.
Test kitchen note: Fry the whole roll before slicing, and only for about a minute; the coating crisps while the nori inside stays pliable.
