Creamy Mushroom and Spinach Soup
Chunky rather than pureed, this soup keeps whole slices of browned mushroom and ribbons of spinach suspended in a light, garlicky cream broth. Drops of cream and a few crisp mushroom slices finish each bowl.
Test kitchen note: Stir the spinach in off the heat right before serving; it wilts in seconds and stays bright instead of turning grey.
Method 6 steps

Melt the butter in a pot over medium-high heat and brown the mushrooms well, about 8 minutes. Set a handful aside for garnish.

Add the onion and cook 4 minutes, then the garlic and thyme for 1 minute.

Sprinkle in the flour and stir for 1 minute, then gradually whisk in the stock.

Simmer for 10 minutes, until slightly thickened, then stir in the cream.

Take the pot off the heat, stir in the spinach and season with salt and pepper.

Ladle into bowls, dot with cream and top with the reserved mushrooms.
