Shell-On Prawn Biryani with Fried Onions
Whole prawns cooked in their shells release a sweet, briny stock straight into layers of saffron basmati. Handfuls of mint, cilantro and dark fried onions keep every forkful fresh, fragrant and a little bit smoky.
Test kitchen note: Leave the shells and heads on; they protect the prawns from overcooking during the steam and add a remarkable depth of flavor.
