Red Prawn Curry with Pandan Rice
Jasmine rice steamed with fresh pandan juice turns vivid green and smells faintly of vanilla and grass. It pairs beautifully with plump prawns in a brick-red coconut curry finished with a ribbon of thick cream.
Test kitchen note: Blend pandan leaves with a splash of water and squeeze through a cloth; the juice colors the rice far more evenly than chopped leaves.
