Method 7 steps

  1. Toss the chicken with taco seasoning. Cook in the oil over medium-high heat for 7 to 8 minutes until browned and cooked through.

  2. Toss both cheeses with the cornstarch. Warm the evaporated milk in a small saucepan until steaming.

  3. Add the cheese a handful at a time, whisking until smooth, then stir in the jalapenos.

  4. Fold the chicken into two-thirds of the queso.

  5. Warm the tortillas, spoon the filling down the center, tuck in the sides and roll tightly.

  6. Sear the burritos seam side down on a hot grill pan for 2 minutes per side until marked.

  7. Halve and serve with the remaining queso for dipping.
