Overnight Oats with Blueberries, Red Currants and Pumpkin Seeds
Rolled oats soak overnight in milk and yogurt until thick and spoonable, ready the moment you wake up. Blueberries and tart red currants dot the surface, and toasted pumpkin seeds add a nutty snap to each creamy bite.
Test kitchen note: Use a 1 to 1 ratio of oats to liquid plus a spoon of yogurt; it stays creamy without turning into paste by morning.
Method 5 steps
-
Stir the oats, milk, yogurt, honey and salt together in a jar or bowl.
-
Cover and refrigerate for at least 6 hours or overnight.
-
In the morning, stir well and loosen with a splash of milk if it seems too thick.
-
Spoon into bowls and scatter the blueberries and red currants over the top.
-
Finish with toasted pumpkin seeds and serve walnuts on the side.
That is the whole pie. Enjoy every slice.
