Cherry tomatoes are seared until their skins split and turn jammy, then tossed with garlicky wilted spinach and kale. Two eggs fry right in the same pan, soaking up the juices and finishing the plate with rich, peppery yolks.

Test kitchen note: Leave the tomatoes alone for the first two minutes in a hot pan; undisturbed contact is what gives them those blistered, sweet spots.

Method 5 steps

  1. Heat 1 tablespoon olive oil in a skillet over medium-high. Add the tomatoes and cook without stirring for 2 minutes, then shake the pan and cook 2 minutes more until blistered.

  2. Push the tomatoes to one side, add the garlic and chili flakes and cook 30 seconds.

  3. Add kale and spinach with a pinch of salt and toss until wilted, about 2 minutes.

  4. Clear a space, add the remaining oil and crack in the eggs. Lower the heat and cook until the whites are set, about 3 minutes.

  5. Slide everything into a wide bowl and finish the eggs with plenty of cracked black pepper.
