Test kitchen note: Chill the filled rolls wrapped in plastic for at least an hour so they slice into clean spirals without squashing.

Method 6 steps

  1. Toss the chicken with the peanut dressing, scallions and chopped peanuts.

  2. Beat the cream cheese with chives until smooth.

  3. Spread two tortillas with a thin layer of the cream cheese, then cover them with the chicken mixture.

  4. Spread the remaining cream cheese thickly over the other two tortillas and scatter with olives, cucumber and lettuce.

  5. Roll each tortilla up tightly, wrap in plastic and refrigerate for 1 hour.

  6. Trim the ends, cut into 1 1/2-inch slices and stand the pinwheels upright to serve.
