Steamed Mussels with Lime and Samphire
Mussels steamed with a splash of cider and lime zest are tossed with salty, crunchy samphire right at the end. It is a bright, minimalist bowl that tastes of the coast, finished with a wedge of lime for squeezing over the top.
Test kitchen note: Samphire is naturally salty, so do not season the cooking liquid until you have tasted the finished dish.
