Soy-Glazed Grilled Baby Squid
Whole baby squid are scored so they curl dramatically on a hot grill, then tossed in a sticky glaze of soy, oyster sauce and a little sugar. A few slices of red chili and fresh cilantro keep this quick street-food favorite lively.
Test kitchen note: Grill squid for no more than two minutes per side. Any longer and it turns rubbery unless you braise it for a very long time.
