Cracked Pepper Pan-Seared Salmon
A heavy coating of coarsely cracked black pepper forms a spicy, crunchy crust on this salmon as it sears in a hot pan. A quick baste with herb butter keeps the flesh silky, and slicing it into strips shows off the rosy center.
Test kitchen note: Crack the peppercorns in a mortar or under a heavy pan rather than a grinder. Big, uneven pieces give the best crunch.
