Soy Sesame Noodles with Crispy Fried Egg
Wheat noodles are tossed in a quick sauce of soy, sesame oil and a touch of black vinegar, then crowned with a crispy-edged fried egg. A sprinkle of scallions makes this a ten-minute supper that feels far more comforting than its effort.
Test kitchen note: Toss the noodles in the sauce while they are still steaming hot; they absorb the seasoning instead of letting it pool underneath.
Method 5 steps
-
Whisk both soy sauces, sesame oil, black vinegar and sugar in a serving bowl.
-
Cook the noodles in boiling water according to the package, then drain well.
-
Immediately add the hot noodles to the bowl and toss until every strand is evenly coated.
-
Heat the vegetable oil in a small skillet over medium-high until shimmering, crack in the egg and fry, spooning hot oil over the white, until the edges are lacy and crisp.
-
Slide the egg onto the noodles and scatter over the scallion.
That is the whole pie. Enjoy every slice.
