Scallion and Cilantro Dry Noodles with Bean Sprouts
Thin noodles are dressed with a savory mix of soy, sesame paste and garlic, then piled high with crunchy bean sprouts. Chopped scallions and a big handful of cilantro keep the bowl light, fresh and vividly green.
Test kitchen note: Blanch the bean sprouts for only twenty seconds; they should lose their raw edge but still snap when you bite them.
