Smoked Paprika Beef Sirloin Skewers
Sirloin cubes are rubbed with smoked paprika, garlic and sherry vinegar, then seared hard so the spices toast into a dark, aromatic crust. Simple and quick, they are just as good as a tapas nibble as they are piled over rice for dinner.
Test kitchen note: Dry the beef thoroughly with paper towels before adding the rub. Surface moisture steams the meat and keeps that dark crust from forming.
Method 5 steps

Soak thin wooden skewers in water for 30 minutes.

Pat the beef dry, then toss with the paprika, cumin, garlic, vinegar, oil, salt and pepper.

Thread 5 or 6 cubes onto each skewer, leaving a little space between pieces for better browning.

Heat a grill or cast-iron grill pan until smoking hot. Cook the skewers for about 2 minutes per side, 8 minutes in total, for medium.

Transfer to a wooden board and rest for 3 minutes before serving.
