Beef and Bell Pepper Kebabs with Soy-Ginger Dip
Tender sirloin cubes and bright tricolor peppers take a quick soak in garlic, soy and a little honey before hitting the grill. A tangy soy and ginger dipping sauce with a squeeze of lemon makes every smoky bite pop.
Test kitchen note: Cut the peppers into pieces the same size as the beef so everything cooks at the same pace and the skewers lie flat.
Method 6 steps

Soak 8 wooden skewers in water for 30 minutes so they do not burn.

Mix 3 tablespoons of the soy sauce with the honey, garlic and oil. Toss the beef in it and marinate for 20 minutes.

For the dip, stir the remaining soy sauce with the ginger and rice vinegar, then divide it among small bowls.

Thread the beef onto the skewers, alternating with the three colors of pepper.

Grill over high heat for 8 to 10 minutes, turning a few times, until the beef is browned outside and still slightly pink within.

Serve the kebabs with lemon wedges and the soy-ginger dip on the side.
