Spaghetti with Clams, Pistachio Pesto and Orange Zest
Sweet little clams open in white wine, and their briny juices loosen a vivid pistachio pesto that coats every strand of spaghetti. Fine strips of orange zest and a crunch of chopped pistachios give this seaside dish a sunny Sicilian twist.
Test kitchen note: Soak the clams in cold salted water for thirty minutes and lift them out by hand; the grit stays at the bottom of the bowl.
