Moroccan Seven-Vegetable Couscous
Cabbage, carrots, pumpkin, fava beans and tomato braise in a saffron and ras el hanout broth until meltingly soft. Spooned over fluffy couscous with its fragrant cooking liquid, it is a generous, festive centerpiece.
Test kitchen note: Add the vegetables in stages by density, carrots first and pumpkin last, so nothing collapses into mush before serving.
