Guajillo-Marinated Grilled Pork Steaks
Thin pork shoulder steaks soak in a brick-red adobo of toasted guajillo chiles, garlic, cumin and orange juice. They cook in minutes over hot coals, picking up smoky grill marks, and are perfect sliced into warm tortillas with onion and lime.
Test kitchen note: Toast the dried chiles just until fragrant, about twenty seconds per side. Burnt chiles turn the whole marinade bitter.
