Ebi Fry Bento with Steamed Rice and Cabbage
Straightened jumbo shrimp are coated in airy panko and fried until they stand tall and golden. Packed with a neat mound of rice and lightly stir-fried cabbage, carrots and green beans, this is a lunchbox that still crunches hours later.
Test kitchen note: Make three shallow cuts on the underside of each shrimp and press gently until you feel a snap. They will fry perfectly straight.
Method 5 steps

Make 3 or 4 shallow cuts across the belly of each shrimp and press them flat so they straighten. Season with salt and white pepper.

Dredge each shrimp in flour, dip in egg and press firmly into the panko.

Heat the oil to 350F and fry the shrimp in batches for 2 to 3 minutes until golden. Drain on a rack.

Stir-fry the carrot and green beans in 1 tablespoon of oil for 2 minutes, add the cabbage and cook for 2 more minutes, then season with the soy sauce.

Pack each tray with a mound of rice, the vegetables and 4 fried shrimp.
