Clear Broth Wheat Noodle Soup with Tender Greens

Cut the scallion whites into short lengths and gently fry them in the neutral oil over low heat for 6 to 8 minutes until golden. Strain and keep the oil.

Bring the chicken stock to a simmer and season lightly with salt.

Boil the noodles in a separate pot of water according to the package, adding the greens for the last 45 seconds.

Into each serving bowl add 1 tablespoon soy sauce, a pinch of white pepper, 1/2 teaspoon sesame oil and 1 tablespoon scallion oil.
