Campechana de Mariscos
This chilled Mexican seafood cocktail layers sweet poached shrimp and tender octopus in a zesty tomato and lime sauce spiked with hot sauce. Creamy avocado, peppery radish, red onion and cilantro add crunch and color to every spoonful.
Test kitchen note: Chill the bowls and the seafood separately and combine them at the last minute. The cocktail should be ice-cold but never watery.
