Baked Sour Cherry Pirozhki
Soft, buttery yeast dough wraps a jammy sour cherry filling in these hand-sized buns, finished with an egg wash that bakes to a mirror shine. Break one open while warm and the deep crimson center spills out, tart and barely sweet.
Test kitchen note: Cook the cherry filling until a spoon drawn through it leaves a clear trail; runny filling will leak and stop the seams from sealing.
