Apple Cinnamon Muffins with Powdered Sugar
Diced apple folded through a cinnamon-scented batter bakes into soft, fruity pockets in every muffin. A snowy dusting of powdered sugar is all they need, making them an easy match for a cold glass of milk.
Test kitchen note: Dice the apples no larger than 1/4 inch; bigger chunks release too much juice and leave damp tunnels in the crumb.

Heat the oven to 375F and grease or line 10 muffin cups.

Whisk the flour, baking powder, baking soda, cinnamon and salt in a bowl.

In another bowl, whisk the brown sugar, egg, yogurt and oil until smooth.

Add the dry ingredients and stir a few times, then fold in the diced apple until no flour streaks remain.

Divide among the cups and bake 22 to 24 minutes, until the tops spring back.

Cool the muffins completely, then sift powdered sugar generously over the tops just before serving.
