Baked Seafood Rice with Shrimp and Crab Sticks
Garlicky fried rice gets folded with shrimp, squid and onions, then baked until the top turns golden and toasty in spots. Seared crab sticks and a sprig of cilantro crown this cafe-style casserole that is equal parts comfort and crunch.
Test kitchen note: Use day-old rice. Freshly cooked rice is too moist and will turn mushy instead of toasting at the edges in the oven.
Method 6 steps

Heat the oven to 425F and butter a baking dish.

Melt the butter in a wok, add the garlic and onion and stir-fry for 2 minutes. Add the shrimp, squid and pepper strips and cook for 2 minutes.

Add the rice, oyster sauce, soy sauce and white pepper, and toss until evenly coated and hot.

Spread the rice in the baking dish and arrange the crab stick pieces on top.

Bake for 15 to 18 minutes until the surface is golden and slightly crisp at the edges.

Top with cilantro and serve straight from the dish.
